• ½ cup melted butter
• 1/3 cup light brown sugar
• ½ cup sugar
• 1/4 teaspoon salt
• 1 ½ tsp vanilla
• 1 large egg
• ½ cup banana puree
• 1 cup flour
For filling:
• 3-4 large bananas
• 12 oz Finely chopped chocolate
• 1 cup peanut butter
• 1 cup heavy cream, hot
METHOD
350 F / 180C Line an 8 x 8 inch pan with parchment paper and spray with cooking spray.
In a bowl, mix melted butter, brown sugar, sugar and salt.
Whish in egg and vanilla.
Add in banana and beat into flour. Pour the batter into the prepared pan, bake for 25 minutes
Cool completely in form.
Place chopped chocolate in a bowl. Pour the boiling cream on the chocolate and leave for 1-2 minutes until the chocolate is completely melted and mix until combine. Add creamy peanut butter until smooth.
Slice the bananas in half and put on the cooled cake.
Pour the peanut butter mixture over the bananas and refrigerate for 15 minutes
