Ingredients
1 kg fresh green beans
2 medium-sized (~200g) onions
3-4 garlic cloves (~10g)
2 medium-sized tomatoes (~400g)
4-5 sweet green peppers (~50g)
½ cup olive oil
1 ½ cup water
2 tsp salt
½ tbsp sugar
Directions
PREPARATION
Soak the green beans in water for a couple of minutes
Wash the beans thoroughly under running water, then drain the excess water
Peel, wash, and dice the onions
Peel, wash, and slice the garlic cloves
Choose a large and shallow pot for cooking
Place the diced onion and garlic into the pot
Wash, peel, and dice the tomatoes, then add into the pot
Add 1 tsp of salt and scour down the mixture for a couple of minutes
Wash and chop the sweet peppers and add to the mixture
Clean and cut the beans into similar lengths: cut each bean at both ends, then split the bean lengthwise and then across the body
Then place the beans into a flat plate or a tray side-by-side and repeat this process until all the beans are cleaned and near-uniform in size.
In an orderly fashion, place the beans into the pot, over the onion-garlic-tomato-pepper mixture
Drizzle ½ cup of olive oil and 1½ cups of water over the beans
Add ½ tbsp of sugar and 1 tsp of salt, then cover the pot with a lid
COOKING
First, bring the ingredients to a boil on high heat, then lower the heat and cook for 22 to 28 minutes; until the beans are soft and tender. Now, rest the beans for 10 to 15 minutes before serving
SERVING
Green beans with olive oil can be served as a warm and light dish or as a cold side dish
Transfer the green beans onto a serving plate. Try to keep their orderly form for a more appealing presentation. Finally, sprinkle some of the base mixture over them as garnishing
